Teju Mixed vegetable pickle, the vegetables are first washed, dried, and then cut into uniform pieces. They are then mixed with salt and spices and left to marinate for a few hours or overnight, allowing the flavors to penetrate the vegetables. After marination, the vegetables are gently cooked or blanched to soften them slightly before being combined with oil and vinegar or lemon juice.
